Mleko, moko, jajca ter sol zme\u0161amo <strong>v gostej\u0161o maso<\/strong> (kakor za pala\u010dinke) ter <strong>tik pred pe\u010denjem<\/strong> vanjo dodamo \u0161e na <strong>drobno narezano sve\u017eo baziliko<\/strong>. Vse skupaj vijemo v vro\u010do ponev. Najprej se zape\u010de na eni strani nato obrnemo \u0161e na drugo. Med tem, ko se pe\u010de fritaja, se lotimo postrvi.<\/p>\n<p>Postrvi <strong>najprej o\u010distimo in filiramo brez kosti <\/strong>ter\u00a0filejem odstranimo ko\u017eo. Iz le-teh\u00a0<strong>nare\u017eemo<\/strong> pribli\u017eno centimeter debele <strong>trakove<\/strong> ter jih <strong>ovijemo v krog (kolut)<\/strong>\u00a0in prebodemo z zobotrebcem, da ohranijo \u017eeleno obliko. Zavremo mo\u010dno slano vodo, ki jo tik pred vreli\u0161\u010dem odstavimo in vanjo\u00a0polo\u017eimo na\u0161e oblikovane trakove iz postrvi. Pustimo jih noter le toliko \u010dasa, da meso zakrkne (<strong>manj kot minuto, toliko, da postane ne\u017eno bele barve).\u00a0<\/strong>\u00a0Nato zvitek\u00a0odmaknemo iz vode ter ga za kak\u0161no <strong>minuto<\/strong> <strong>pomo\u010dimo v belo vino<\/strong>, v katerega smo dodali sol in kan\u010dek <strong>olivnega olja<\/strong> in bomo s tem dodali <strong>kan\u010dek prefinjenega okusa<\/strong>.<\/p>\n<p>V tem \u010dasu se nam je fritaja \u017ee naredila in jo nare\u017eemo na \u017eelene kose, ker bo slu\u017eila kot posteljica za na\u0161e kanapeje. Na posamezno posteljico polo\u017eimo zvitke iz postrvi ter njim\u00a0<strong>pazljivo odstranimo zobotrebce<\/strong>.<\/p>\n<p>Ker pa moramo jedi dodati \u0161e <strong>pridih prefinjenega okusa<\/strong>, dodamo \u0161e omako, kateri je osnova\u00a0<strong>tartufata<\/strong>, ki smo jo razred\u010dili\u00a0s smetano (kislo ali za kuhanje). <strong>PAZLJIVO!<\/strong> Razmerje med tartufato in smetano naj bo tak\u0161no, da ne bo okus tartufov prevladoval nad ribo.
